Lentil Salad

L e n t I l  S a l a d

Ingredients for 4 people

 150g. brown lentils
3 peppers (red, green and yellow)
3 gherkins
250g. firm tomatoes
50g stoneless black olives
1 bunch of radishes
1 large onion
1 tin of corm
1 teaspoon vegetable stoc
2 teaspoons olive oil
1 tablespoon vinegar
½ teaspoon cumin
Salt, freshly ground pepper

 M e t h o d: 

  •        Soak the lentils in warm water for an hour.

    • Bring to the boil and allow to simmer for 15 Minutes, so that they are still al´dente.

    • Strain and cool.

    • Cut peppers and tomatoes onto cubes.

    • Cut the radishes, gherkins and olives into small pieces.

    • Cut onion up small.

    • Strain corn.

    • Mix all the ingredients with the lentils, season with vinegar and pepper to taste . Allow to stand for ½ an hour before eating..
